Here's another way to spruce up veggies for the kiddos. This is a family favorite and we always serve it at holiday dinners with my in-laws and my mom. It's delicious!
Ingredients:
1 can whole kernel yellow corn (do not drain!)
1 can cream style yellow corn
1 (8 oz.) carton sour cream
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted
1. Mix all ingredients together and pour into large, lightly oiled casserole dish.
2. Bake at 350 degrees for 55 to 60 minutes.
