Blueberry Oatmeal Wheat Pancakes

This is a yummy family favorite!


1/2 cup whole wheat flour

1/2 cup unbleached white flour

1.5 cups oatmeal

2 tablespoons baking powder

1/4 cup extra light olive oil

2 tablespoons honey

3/4 teaspoon sea salt

2 cups milk

3 eggs, beaten

1/2 cup frozen blueberries

1. In a small bowl, whisk together the egg whites, honey, olive oil and milk.

2. In another bowl, combine the dry ingredients. Add the egg mixture and stir until slightly moistened. Then carefully fold in blueberries.

3. Cook on heated non-stick pan or griddle. Coat pan or griddle with a bit of extra light olive oil.

Makes about 16 pancakes.
