Alex's Birthday

Today is my gorgeous, smart, wonderful oldest daughter's 14th birthday! I can't believe that my sweet little red haired (it was bright red!) baby girl is already fourteen. We're having a birthday party for her tomorrow and she's so excited. This is the first year that she and Cami have had separate parties and they are enjoying it.

Laundry Room Transformation!

Okay, I have to admit this is pretty embarrassing for me and I can't believe that I'm posting it, but I want to show that YES, it can be done! Between 4 kids, a husband, and 4 college classes, I managed to do this. I'm also posting this so that those of you who may have messy rooms know that it's OKAY and that it can be cleaned and taken care of.

The laundry room has always been the messiest room in the house and it got even worse when we moved. When we moved into the new place, I decided that I was going to wash every article of clothing that all six of us owned so that they would smell fresh and clean. It took me awhile, but I managed. So...here are the results!

This is how it looked when I took the first picture. It was worse than this, but I had done a little clean up. I'm cringing in embarrassment, seriously.

Here is the in between picture. It's already looking better.

And, here is the finished product. I'm so happy with it! I want to add a few more things, like a cart with drawers to put supplies, but I'll do that later. That box is a storage box for cords, etc, and we have no room in the storage building for it, so I guess it stays in the laundry room for now. Doesn't it look 20x better, though???

Yes, I'm still blushing with embarrassment over my laundry room. However, it's been a couple of weeks and it still looks like it did in the pics, woohoo!

Easter and Birthdays!

Easter is on its way! We are MOSTLY prepared around here. We're dying Easter eggs tonight and tomorrow we are having a party for Cami whose birthday is on Easter. She's excited and I'm stressed! I have a huge lecture exam tomorrow in one of my classes and I'm nervous. Also, my mom is going to be up here this weekend so I've been in a tizzy trying to get the house looking awesome. I think we've done a great job!

Sorry I haven't posted much lately; I've been busy with school. The applications for the nursing program were due yesterday April 1 and I filled one out for both the RN and LPN programs. I won't find out until the end of May/beginning of June.

Decorating on a Budget: A Teen's Bedroom

Ems lost the other tie back, so I had to leave the curtains down...darn it!

When we moved into this new apartment, we decided that Alex and Cami would share a room that was bigger and had a huge walk-in closet, while Ems would get the smaller, front bedroom off the living room. This was mostly because Nate and I spend a lot of time in the living room after the girls go to bed and Ems can sleep through anything (she slept through an earthquake!). However, the bedroom situation isn't working out. One preteen (almost teen) girl and one teenage girl cannot share a room, at least in my house. Alex and Cami are constantly at each other's throats, so Nate and I thought that we would separate them and give Alex the front bedroom with Ems moving in with Cami.

So far, this is working out well, except that most of the furniture we had for that room wasn't really something for an older girl. Ems had pink, flowery, girlish bedroom items and Alex wasn't going for that. However, Alex couldn't bring the zebra comforter and sheet set from the other room because it matched Cami's and the room. Also, there was no headboard for the twin bed and the furniture consisted of an armoire and a computer cart/TV stand. It just wasn't enough.

So, I went to Wal-Mart and bought a comforter set for $30.00 and my mother, God bless her, bought a dresser to go in the room. We moved the armoire to the back of Cami and Ems' closet (like I said, it's HUGE) and moved the dresser in. However, the room still felt incomplete; it just needed something.

While going through Ems closet and the armoire, I had bags of clothing that no longer fit her or, if they were too large, she would never wear, so I packed them into the van to drop them off at the local Goodwill store. Most of the items were like new and what wasn't was still in great condition (my uncle's wonderful, wonderful wife gives the girls lots of clothes, she is amazing) and I know that I'm always tickled pink when I find stuff like that while browsing the aisles. Anyway, I digress; I dropped the bags off and planned to go straight home, but decided at the last minute to go inside and look around. I wasn't really searching for anything in particular, I just wanted to look at house stuff. Imagine my surprise when I found a wood twin sized headboard with a shelf for...$15.00! I was ecstatic and bought it immediately!

We brought it home in the van (Bless Alex for helping me carry that thing up the stairs), set it up, and it looks amazing! It's a tiny bit darker than the wood on the dresser, but its not noticeable unless you're looking for something to complain about. We moved the bed 90 degrees and now Alex's room looks awesome! We also figured out that we have enough room in there to place an old desk we have, so we're going to paint it white (the dresser is white and maple) and put it in there for her to do homework and/or work on her laptop. I'm so excited! Total cost for her new bedroom set up: $60.00 (comforter set, headboard, wall hangings/art, and paint for the desk). That's not bad!

Anyway, that was my excitement for the week. ;-) I'm at home today with a sick kiddo and one who just received shots, so it's been kind of quiet (they've been sleeping). It was a crazy morning, but the day has gotten better.

Blueberry Oatmeal Wheat Pancakes

This is a yummy family favorite!

Ingredients:

1/2 cup whole wheat flour

1/2 cup unbleached white flour

1.5 cups oatmeal

2 tablespoons baking powder

1/4 cup extra light olive oil

2 tablespoons honey

3/4 teaspoon sea salt

2 cups milk

3 eggs, beaten

1/2 cup frozen blueberries

1. In a small bowl, whisk together the egg whites, honey, olive oil and milk.

2. In another bowl, combine the dry ingredients. Add the egg mixture and stir until slightly moistened. Then carefully fold in blueberries.

3. Cook on heated non-stick pan or griddle. Coat pan or griddle with a bit of extra light olive oil.

Makes about 16 pancakes.

It's Menu Planning Monday time....even though it's Saturday! I'm trying to get ahead of the game this week. I was so busy with studying last week that I wasn't able to make up my menu. It was kind of a food free-for-all this past week and the kids both liked and disliked it. So, I went ahead and worked on my menu for this coming week and made up my grocery list. I usually go grocery shopping on Mondays, but I'm actually going tomorrow.

Here's the menu:

Kids' Home Management Journal or Binder

So, the girls wanted to make a Home Management Journal of their own, titled, respectively Girls' Home Journal. They wanted a place to keep school work, friend's numbers (besides their phone), and copies of routines, etc, so we set up a small binder for them. It's been working rather well, they like having all their stuff in one central location and I thought I would share it with you!

Immediately after opening we have a list of Emergency numbers, which I've uploaded for you to use here. Behind the list of Emergency Numbers, we have a list of family and frequent contacts such as Mom and Dad's friends, etc.

Next, we have a generalized list of their daily routine, followed by the Morning Routine, After School Routine, and Evening Routine.

Each girl has her own section, which has a calendar for her to put anything on (birthdays, games, parties, etc) and behind that we have a list of all their friend's phone numbers. Also, in each section, they will have any pictures or school items that they want to keep in there. Their school schedules and report cards are in the master HMJ (Optimus Prime), but anything else would go in their home journal.

We plan to add more as we go, but I think it's a good start. Good luck with your own. Personally, I think HMJ's (or JMJ's if you're working) are great for Moms, Dads, kids, families, and anyone else who wants to stay organized. Honestly, I keep one for my schoolwork, too!

Easy Lasagna

Before going in the oven.

Last night we had lasagna, seasoned italian bread, and salad for dinner with hot fudge cake for dessert. The lasagna that I make is extremely easy, so I thought I would share the recipe with you.

Ingredients:

1 lbs extra lean ground beef (or ground turkey)

1.5 jars spaghetti sauce

9 lasagna noodles

1 15oz Ricotta cheese

Mozzarella Cheese

Parmesan Cheese

1. Brown the ground beef, drain, and add in the spaghetti sauce. Preheat oven to 350 degrees.

2. Boil your noodles until tender or almost tender.

3. Add a thin layer of meat sauce on bottom of 9 x 13 in pan, then a layer of noodles, and a layer of ricotta cheese, then sprinkle a thin layer of mozzarella and parmesan. Continue this until your baking dish is full. The final layer should be of mozzarella and parmesan.

4. Cover the pan with aluminum foil and bake approximately 30 minutes or until everything is warm and bubbly.

5. Serve hot.

Mine didn't turn out as well as I'd hoped last night. I was talking to Alex while cooking and ended up dumping 2 whole jars of spaghetti sauce into the meat pan instead of one and a half, so the lasagna was a little messy.

Tasty Treat Tuesday: Hot Fudge Cake

I've been craving chocolate lately, especially my favorite childhood treat: hot fudge cake. When I was younger, my mom and I would go out to dinner every so often with my grandparents and my uncle. We always went to a local restaurant called Western Sizzlin' and my uncle almost always got a hot fudge cake that he shared with me. It's definitely a fond memory and HFC is still one of my favorite desserts (along with chocolate no-bake cookies whose recipe I will post soon).

I haven't made this dessert in awhile, so I don't have any pictures, but I'm making it tomorrow for dinner, so I will update then with plenty of pictures. This recipe is quick, easy, and very rich.

Enjoy!

Ingredients:

1 box Pillsbury Devil's Food cake mix (with pudding)

1 cup semi-sweet chocolate chips

16 oz jar Hershey's hot fudge topping

Vanilla Ice Cream

Optional:

Whipped Cream

Cherries

1. Make the cake mix according to directions, stir in chocolate chips, then bake according to directions on box. When it's finished, let it cool completely.

2. When cool, cut cake into squares, then cut them in half. Spoon ice cream onto bottom half and put the top back on.

3. Microwave hot fudge according to directions, then pour/drizzle a small amount over the top of the cake and ice cream. Add the whipped cream and a cherry if you like (I do the whipped cream, but no cherry).

Yum!

If You Don't Use It, You Don't (Necessarily) Lose It

Can you name all these?

This week has been a little crazy. I feel like I've been all over the place and back again. My housework is suffering some, but I know, in the long run, it's definitely worth it.

The midterm for my anatomy class is due by Monday 03/08 and it's over 7 chapters, which is a lot, especially if you're like me and have problems getting anything to do with Chemistry to sink in. Chapter 2 in the textbook deals with basic chemistry, molecules, mixtures, compounds, reactions, and bonds along with biochemistry such as ionic compounds and organic compounds. Chapter 3 is about the cells: structure, function, growth, and developmental aspects. These two chapters are amazingly difficult for me to 'get' and it's so frustrating. The other chapters have quite a bit of memorization (what type of tissue is where in the body, anatomy, type, structure, and development of bones, and all of the bones - head and body) and I'm stressed and worried.

I actually took this class last semester and didn't get a grade that I feel is high enough to get into the Nursing Program, so I'm retaking it. Last semester, I did great until the midterm and I totally whiffed it. I was so disappointed in myself, mainly because I'm so used to doing well in anything academic related that I didn't apply myself as much as I should have. In all honesty, I didn't study much because I don't really know how to study. I've never had to, so not doing well in this class was a wake up call (I passed, but not with an A and I don't like it!)

So, I've been studying my butt off since the weekend, trying to get this stuff into my head. Some of it is sinking in and some of it I'm still having trouble with. It seems like my day is a never-ending cycle of wake up, take kids to school, change and feed the baby, put the baby down for a nap, study, clean, pick the kids up, feed them, clean, and study some more once they are in bed. I did take a day off this week, but I now wish that I hadn't because I have absolutely got to get this stuff down!

Also, I recently took the TEAS test (Test of Essential Academic Skills) and I didn't do as well as I thought that I should have. Can you tell that I'm a bit of a Type A personality at times? This test plays an important role in whether I make it into the Nursing program or not. The school bases entrance on points and these points are reflected by your grades (A = 30 pts, B = 20 pts, C = 10 pts, anything below a C and you're not getting in) and by the score that you receive on the TEAS test. So, to be competitive, I need to make all A's and make at least an 85% adjusted score on the TEAS; however, I'm going for a score more in the 90% range. Since I don't live in the county, I won't get the extra 3 points that others will get and I need to make up for that somehow. See, no stress for me at all, right?

On a good note, I found out that I'm on the Dean's List, which is awesome! I also received a letter inviting me to join the honor society, Phi Theta Kappa due to outstanding academic achievement. This made me very emotional and it felt really good. I've been out of school for years, so it was nice to know that if you 'don't use it, you don't lose it' instead of the other way around. Also, it was nice to show my children that I'm doing well. I'm doing things backwards when it comes to life. I had my children first and now I'm going to college. It's wonderful to be able to show them (the kids) that you can accomplish your dreams, no matter what age you are!

Tasty Treat Tuesday: Baked Egg Cups and a mild tangent.

I'm running out of personal recipes to give to you guys (I'm not very creative in the kitchen), so I found a low carb recipe on Sparkpeople that I wanted to try and I decided to share it with you. I think that I might make them this weekend since I have eggs on the menu anyway. You can find the recipe for Baked Egg Cups here. They look yummy.

Things have been pretty wild this week and it's only Tuesday! I realized yesterday that my final in A & P must be taken by the 8th of March and I'm freaking out! So, I've been studying my rear off. While doing that, I'm also taking care of an 18 month old and running after a bunch of crazy girls. Seriously, it sounds like a war zone in our house sometimes. Oh yeah, did I mention that I'm also trying to quit Diet Mountain Dew and I've been exercising with Jillian Michaels?

I have to admit, I'm kind of addicted to exercise videos. There is nothing better than sitting on the couch in my sweats with my feet propped on the ottoman, eating a ham biscuit, and watching these slim, muscular people work out. Watching them (the workout people) makes me tired and listening to them makes me feel that I've accomplished something. However, this whole addiction to exercise videos (I really do try them, I promise!) has gotten me in trouble a bit with the hubby, at times. I have half a row on the bookcase devoted to those types of dvd's. I've got Carmen Electra's Striptease (let me tell you, I did that a couple times until Nate wanted to watch, then swinging my head like a bull getting ready to charge just wasn't as funny anymore, but that's another story), New York Ballet videos, belly dancing videos, yoga, and pilates videos; pretty much any type that you could think of. I've tried all of them, sure, but I haven't stuck with any of them. I'm hoping that Jillian, with her attitude can keep me in line. If she can't, I'm going back to Sweatin' to the Oldies where at least I can listen to decent music.

Annnnddd....end rant. I don't know where that came from, but it probably stems from the fact that I'm hiding out. From the laundry. I'm not joking; it's almost spilling out of the laundry room in search of me. I'm so behind....

On a good note; I'm attempting to read Through a Glass Darkly, by Karleen Koen again. It's one of my favorite books and never fails to make me cry. I love it.

I didn't get to make the menu for last week...I was running behind all last week it seemed. It was Nate's off week, so we spent a lot of time together, too. I tried Thai food for the first time and it was AMAZING! Also, I made Butter Chicken last night (thanks again, Tami, for the recipe) and it turned out pretty well. All in all, it was a really busy week. However, I was determined to get the menu finished this week.

After this it's time to Shred with Jillian Michaels, which I'm so not looking forward to. However, it's day 3 so I can't slack off. I need to see some changes! I'm hoping that exercising will not only help with my weight, but my psoriasis, too. You know, as stress relief. :-)

Valentine's Day 2010

My wonderful, wonderful husband, Nate, gave me an absolutely amazing Valentine's Day. Last night we watched a movie then went to dinner at my favorite restaurant (we ate at the hibachi and had sushi, yum!). He also bought flowers; lilies, my favorites! It was a great V-Day.

I made breakfast for everyone this morning, including my mom who was up here for the weekend. She was an awesome Valentine's Day gift, too! I hope everyone has a great day today!

What has Geometry ever done for me?

I've got my pinto's (with onions and salt pork) going in the Crockpot for dinner tonight (we made burritos last night since someone *cough* yours truly *cough* forgot to start the pintos yesterday) and Baby D is watching his video on sign language. I'm attempting to study for the TEAS test I'm taking next week, but it's not going so well. I keep getting distracted by other blogs (such as this one, which I just found) and by my daily dose of celebrity gossip, which, I freely admit, I am slightly addicted to. Mostly because it gives me an excuse to be snarky when I'm feeling a little stressed.

Anyway, back to the TEAS test. TEAS stands for Test of Essential Academic Skills and it's needed to get into the nursing program at my college. Now, I'm not normally completely slow, but you give me a book with math problems more difficult than basic algebra and I'll give you a look of confusion. The TEAS doesn't have math that's too difficult, but it does have some geometry and I have to say, I've never understood the importance of it. Why do I need to know the circumference of a circle? Why do I even care? I'm not going to be an Astrophysicist, so it shouldn't matter, right? Wrong. Someone, somewhere decided that I needed to know geometry, so, here I am, plugging along, trying to remember formulas. As you can tell, I'm seriously excited about it, too.

So, instead of staring blankly at the book while trying not to nag myself to death (see this post), I decided to write a blog post. It gives me a few moments of distraction and allows me to clear my mind, at least for a bit.

Tasty Treat Tuesday: Apple Crisp

Here's another family recipe that my girls enjoy eating and making. We hope that you will, too!

Ingredients

4-5 apples, cored and sliced

1/4 c sugar

1/2 c brown sugar firmly packed

1/2 c oatmeal uncooked

1/2 c all-purpose flour

1/4 c butter or margarine

3/4 tsp cinnamon

1. Preheat oven to 375 degrees. Grease bottom and sides of pan with shortening or cooking spray.

2. Place apples in 8x8 baking pan. Stir in sugar and set aside.

3. Combine oatmeal, brown sugar, flour, and cinnamon in a bowl. Cut in butter until mixture resembles coarse meal.

4. Sprinkle over filling and bake for 3035 minutes or until fruit is tender and topping is golden. Serve with a scoop of vanilla ice cream and enjoy!

Naggy McNagster

I don't know if I've ever told you this, but...

....I'm a nagger. A HUGE one. I nag my husband, I nag my kids, and I probably nag my friends, who are too fabulous to tell me that to my face, by the way. I even nag myself, and that's when you know things are bad. I come by it naturally. My mother is the nagger to top all naggers and my grandmother (God rest her soul ♥) was just as bad. If I had turned out to NOT be a nagger, there would have been a problem, I think.

Most of the time, I don't even notice that I'm nagging. Since I have poor memory retention, I tend to repeat things often, not even realizing that I had just said the same thing five minutes ago. Or, if someone doesn't respond to me when I first say something (such as "The garbage needs to be taken out."), I will repeat it until I get a response and it's usually not the one I was expecting. Sometimes it works, but, more often than not, I just get someone annoyed at me, which is the last thing that I want.

So, imagine my disgust when I realize that I'm staring blankly at my Chemistry textbook, attempting to nag my brain into 'getting' all of this stuff about conversions, atomic matter, and chemical equilibrium. I'm not a bad student by any means, but I find myself so frustrated over this class. Usually any attempts to study end in

1. a zone out complete with zombie fantasies where they take over the world and I never have to do homework again or

2. a complete nagfest where I constantly think, "brain get this, brain get this, brain get this! Why can't you do this already?" Both leave me a little exhausted and giddy.

And in need of a nap. My brain hurts now.

Note: Apparently it would be weird if one of Cami's friends saw me wearing a Mass Effect 2 sweatshirt. While *I* would assume it would be 'cool' (as if that's ever possible in the eyes of an 11 yr old), I got huge eye rolls when I stated this with sarcasm. A true mom's work is never done.

Menu Planning Monday: 02/08/2010

It's been a long day already and it's only a little after two in the afternoon! Baby D woke up at five this morning, jumping around in his bed and 'talking'. It was cute, but, while he wanted to play, I wanted to get his diaper changed and back in bed, so we compromised. He was changed and had a cup of milk, then went back to sleep. I got a bit more rest before having to take the girls to school, so I feel a lot better than I would if I'd been up since five in the morning!

Since Baby D is sleeping, I thought I would sneak on here and post my weekly menu. Breakfast, lunch, and snacks are for the kids only. Here it is in all it's glory.

Low Carb Recipe - Oopsie Roll

Amazingly enough, though I don't eat a ton of breads and I eat very little sweets, I crave them when I'm low carbing. So, while on sparkpeople.com, I found a recipe for Oopsie Rolls and tried it. They are amazing and only have .9 grams of carbohydrates! Here is the recipe, just for you. (These were made by Cleochatra. Thanks, Cleochatra!)

Ingredients:

3 large eggs

1 packet Splenda

Dash of salt

Pinch of cream of tartar

3 oz cream cheese (do not soften)

1. Preheat oven to 300 degrees

2. Separate eggs and add Splenda, salt, and cream cheese to the yolks. Use a mixer to combine the ingredients.

3. In a separate bowl, whip egg whites and cream of tartar until stiff. Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites.

4. Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.

5. Bake approximately 30 minutes (they should be slightly soft, not crumbly).

Makes 6 servings. Enjoy!

Decorating on a Budget:: Flower Garlands

Most of us with children are on a tight budget and it can be hard to find items that beautify your home without breaking the bank. I'm a tightwad when it comes to money, honestly (with most things anyway), and I won't buy things that are more than I, personally, think is reasonable unless I absolutely have to. It just kills me to pay way too much for anything and I get a small tic in my eye when I have to. Okay, not really, but you get the gist. ;-)

I've been searching for an inexpensive way to make the cabinets in our apartment look better and I found it! While browsing at Wal-Mart (which doesn't happen often since I like to go in, get what I want, then leave) I came across garlands of flowers on sale for $3.00. I bought one of those, along with a few separate pieces that were on sale for $1.00 each and had my wonderful husband place them on the cabinets since I am too short to do so, even with a stool. The picture below just doesn't do it justice and I couldn't get a really good one. It definitely warms the kitchen and the colors match perfectly! Next, I want to get some small ferns to place at each end, but for now, this will suffice.

Tasty Treat Tuesday: Easy Beef Stew

This recipe is extremely easy and fills your home with the moth-watering aroma of cooking food. I make this at least once a month during the winter months and it's a family favorite. This recipe was made through trial, error, and figuring out what my family enjoys most. I don't usually use exact amounts on recipes, preferring to go by "taste" but, I've tried to get this down for you. I make this in the crock pot, but it can be modified for stovetop. I've had to do that before when I've not had much time.

Please enjoy!

Ingredients:

2 lbs Stew beef or beef cut into chunks

1 2/3 cup chicken stock (I prefer chicken stock because of the added spices)

1 12oz can of cream of chicken soup (or 1/2 a 26 oz can)

1 package hearty beef stew mix for the slow cooker

3 15 oz cans diced potatoes

1 14.5 oz can cut green beans (you can use more, but my kids aren't fans of green beans)

1 15.25 oz can corn

4 carrots diced (I omitted those today due to not having any....oops)

Minced onions

Remember, fresh vegetables can be substituted, I just use canned to save time and it still tastes great. Do not use frozen vegetables. If using fresh vegetables, I use approx 2 - 3 lbs potatoes cubed and 1/2 - 3/4 a whole onion.

1. In a medium bowl, mix the cream of chicken soup and chicken stock together. Add in package of beef stew mix and stir until blended. Add onions and set aside.

2. Add 2 lbs thawed stew beef or chunked beef into crock pot, then add vegetables.

3. Pour beef stew mixture over meat and vegetables, then stir well.

4. Cook in crock pot for 8 hours on low and 4 hours on high.

Enjoy!

Daily Routine for Kids

My husband and I have been working on a new daily routine for the girls since we have moved. It's actually been an easier adjustment for them than it has for me. Since I drive them to school and pick them up, they get to sleep later and get home earlier than they did when they rode the bus. In addition, they get to eat breakfast at home instead of at school and they really like that (plus I can make sure that they are eating well).

Anyway, back to the schedule issues. My girls are messy, very, very messy, especially Ems. I'm not sure why, but they are. At the old place, I would go into the bathroom after they had left for school and it looked like a cyclone had hit it; hair dryers and straightening irons still out, clothes on the floor, and toothpaste and hair in the sink. It was definitely not the first thing I wanted to see in the morning. So, I am bound and determined that it will not happen in our new apartment. They have to clean up after themselves in the morning (especially the hair and toothpaste in the sink), no ifs, ands, or buts. I can deal with a dish in the sink instead of in the dishwasher, but the bathroom is another story. Thus the Daily Routine was born. Here it is in all its glory.

MORNING:

Wake up and Make Bed
Get Completely Dressed; Put Laundry into Basket
Fix Hair and Makeup for the Day
Clean up Bathroom Counters/Dresser Top
Eat Breakfast; Rinse Dishes and Put in Dishwasher; Make sure counter is clean
Brush Teeth, Wash Hands, Make sure sink is clean (hair free)
Be ready to go at 7:20a

AFTER SCHOOL:

Homework done; Placed back in backpack when completed

This is how they left their room this morning. I can't believe I'm actually showing this since it's embarrassing, but at least you know what I'm dealing with here. And, this isn't even showing all of their room! Alex likes to complain about it because she feels that she doesn't need one, however, she's the first to not make her bed or leave the straightening iron out. I'll update you and let you know if it works.

Tomorrow we'll get into the chore list and what Nate and I are trying to implement in regards to their electronic Christmas presents from Santa. It goes along with this routine.

Low Carb Lifestyle

I began my low carb diet today and I'm writing on here for accountability. I'm terrible with food. I'm definitely an emotional eater and I even use food to reward myself for a job well done. However, I have this stubborn baby weight to lose and I'm determined to get it off and keep it off. It's been hanging around (pun intended) since I had Honeybear and I'm tired of it. I lost 30lbs in 2007, then found out I was pregnant with Baby D, so all the weight came right back. I am DONE!

Just a quick update on my wall decorations.

I have one of those round, wooden tables with the screw on legs that was just sitting at the top of the stairs, so I put a white table skirt on it and bought a new plant to place on top of it. I put the table under the new wall decoration and here is what I have.

The girls were out of school today, due to teacher's professional day, so we just relaxed and worked on the house a bit. Since we live in an apartment, we are unable to paint or stencil, so I have to use what I've been given. However, at Wal-Mart, I found stick on wall art that was gorgeous and just what I was looking for. I bought two of them and here is the result of one.

It was much harder to put up that I thought it was going to and I'm still not satisfied that it's straight. I'm going to have Nate look at it tonight or tomorrow and see if he can get it straighter. I just hope that the sticky doesn't come off of it from moving it around.

School is going well. I've got almost all of my homework done for the week, I just need to study more. My first face to face class this semester is on Saturday and I'm nervous. I'm really very shy and prefer to hide behind my computer screen. Oh well, I can only hope for the best.

Tomorrow, I may show picture of my next project; my laundry room! I've been washing every single article of clothing from the old place and I'm still not even close to being done. To get my butt in gear, though, I might post pictures on here so that I can show exactly what I've done.

The New Semester Starts!

Today is the first day of the new semester and I am extremely excited! I'm taking five classes; Anatomy and Physiology 1, Anatomy and Physiology 2, Chemistry 1, Technical Writing, and Advanced Insurance Claims Procedures. I was so excited and ready to get into the swing of things that I could barely sleep last night and woke up very, very early this morning.

After dropping the girls off at school, I gave Baby D his breakfast, then did all the breakfast dishes and cleaned the kitchen (see my sink is shined!).

Next on the list was the hallway/main bathroom. I made sure that was straightened up since the girls always forget to clean the counter and usually leave hair and/or toothpaste in the sink. It looked good in there (ignore that bobby pin).

Once all that was finished and I'd vacuumed the living room, computer area, and hallway, I had a chance to relax and look over my schoolwork some. Not much was accomplished, however, since Baby D was ready to play. We played some games and I chased him around the house until naptime. I finally got a good look at my schoolwork and printed out the syllabus for each class. I really can't wait to get started.

Tasty Treat Tuesday: Southern Buttermilk Biscuits

We southerners love our biscuits and can eat them anytime. The best ones are buttermilk biscuits made with White Lily flour. I've eaten homemade biscuits my whole life and no others compare. Here is a great recipe that I use often.

Ingredients

3 cups all-purpose flour (White Lily preferably)

3/4 teaspoon baking soda

3 tsp baking powder

1 tsp salt

3/4 cup Crisco shortening

3/4 cup buttermilk

1. Preheat your oven to 450°F.

2. Add baking powder, salt, and baking soda together in a bowl. Add Crisco slowly until the mixture resembles coarse meal.

3. Add the buttermilk and mix JUST until combined. If it appears on the dry side, add a bit more buttermilk.

4. Turn the dough out onto a floured board. Knead the dough until it is the consistency of clay.

5. Shape the biscuits by hand or use a cookie cutter.

6. Place the biscuits on a lightly greased cookie sheet.

7. Bake for about 10-12 minutes- the biscuits will be a beautiful light golden brown on top and bottom.

Do not over bake.

Note: Handle the dough as little as possible or you will have tough biscuits.

Note 2: Also, when I'm short on time, I make 'drop biscuits'; taking large tablespoons of dough and dropping them onto the cookie sheet. They taste great either way!

Note 3: You can also add cheese, garlic, and other spices to the biscuits

Tasty Treat Tuesday: Corn Casserole

Here's another way to spruce up veggies for the kiddos. This is a family favorite and we always serve it at holiday dinners with my in-laws and my mom. It's delicious!

Ingredients:

1 can whole kernel yellow corn (do not drain!)
1 can cream style yellow corn
1 (8 oz.) carton sour cream
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted

1. Mix all ingredients together and pour into large, lightly oiled casserole dish.

2. Bake at 350 degrees for 55 to 60 minutes.

We're moved in! For the most part, anyway. We've still got some clothing and other items to move over, but all of our large items have been moved and a big chunk of our clothes. I've not done much decorating (the walls are still bare) but I'm getting there. I'm so excited! I also have to give HUGE applause to my husband who did so much this past week. He moved a large chunk of items by himself and made do with my help for the rest. I thank him because he alternately encouraged and annoyed me enough to not give up when moving those large items was tough. The stairs were difficult to maneuver and I'm no Hulk, that's for sure. I have sore muscles where I didn't even know I had muscles (well, actually, I did, thanks anatomy and physiology class!) and I'm bruised in the weirdest places. But, we are so close!

I've got a few pictures to share. Here is part of the living room (along with Hubby on the laptop). Remember it's not completely finished and I'm not really sure if I'm going to keep the furniture where it's at.

Next is Ems' room. She loves it.

Finally is Alex and Cami's room. They ADORE it. It's not completely decorated, but it's coming along nicely.

Once I get my room set up, I'll share pictures. I can't seem to get good ones of our bathrooms, but they look great! BTW, having two bathrooms is SUCH a blessing! I was actually able to sleep in some today because I didn't wake up when the girls were bickering in the bathroom. In the old place the (one!) bathroom was beside our room and, strangely enough, only one of the bedrooms had vents for air and heat in them (ours did not), so we had to keep the door opened. We were woken up countless times. So, it was definitely nice to NOT hear them. Also, they made their beds and cleaned up the bathroom before leaving for school. I'm so proud! Even Ems tried. She just covered her pillow with the comforter and shoved clothing in the closet. I went in after they were done and fixed everything up. I suppose it's time to update my schedules and Optimus Prime!

Tasty Treat Tuesday: Roasted Green Beans

My children aren't the greatest vegetable eaters, so I have to compensate and do what I can to make the veggies taste good for them. When I came across this recipe for roasted green beans, I was instantly excited, thinking that they would like it. I added my own spin to it (the seasoned salt) and the loved it (Nate did, too)!

Ingredients:

1 bag frozen French Cut Green beans (or 2 lbs fresh)
Olive oil
Seasoned salt

1. Thaw frozen beans.

2. Preheat oven to 400 degrees.

3. Place beans in a bowl and lightly drizzle olive oil over them. Sprinkle with seasoned salt. Toss until well coated.

4. Place green beans on a cookie sheet in a single layer and cook for 30-40 minutes depending upon your preference.

Easy Burritos (Mom in Law's Recipe)

I apologize in advance for the terrible pictures. Alex took the camera to school to take photos of her friends, so I was left with only the camera on my cell phone.

I made these burritos yesterday afternoon and they are amazing! Nate likes to take them in his lunch because they are easily microwaved and very filling. Here are the ingredients. The above picture is of the burritos I made specifically for him yesterday.

1 lb ground beef (or turkey)

1.3 lbs (that's how they come in the package) Italian sausage or bratwurst

2 packages fajita seasoning

2 can refried beans

1/2 cup water

1 pkg shredded cheddar cheese

1/2 pkg shredded pepper jack cheese (optional)

8-10 flour tortillas

Tomatoes (optional)

Sour Cream (optional)

1. Take the italian sausage/brat's out of their packages and brown them. I usually brown the ground beef and sausage together.

2. While the meat is browning, open the two cans of refried beans, place them in a pot, and begin to heat them on medium-low heat.

3. When meat is finished cooking, drain well, then place in a large bowl. Add water and fajita seasoning. Mix well. Stir in heated beans and cheeses. Mix well.

4. Place approximately 2 spoonfuls in the middle of a flour tortilla, then roll them up. I use big mixing spoons. We also like jalapeno cheddar tortillas, but I wouldn't recommend them for younger kids.

I usually wrap all the burritos in cling wrap since we don't ever eat all of them at one sitting. Then I pile them in the refrigerator and watch them disappear!

For Nate's burrito's I sliced a small Roma tomato and added a couple of teaspoons of sour cream to each burrito (he loves that stuff....).

Life's Little Blessings: Baby Snuggles

One of my favorite little life blessings is a sweet, cuddly, just woke up baby! Baby D gives hugs and kisses when he first wakes up and is so sweet. Then he gets completely awake is active as all get out! One of his favorite things to do is knock the tray off his high chair, so that it makes a loud noise and scatters food everywhere. He thinks its hilarious, while I am not so amused. I find myself sweeping constantly and finding Cheerios in odd places, like kitchen chairs, cabinets, etc.

Today when he woke up from his nap, he had crazy hair! It was completely adorable and I had to take a picture.

Pumpkin Spice Pie

Alex decided that she wanted to make a pie this weekend and I said, "have at it!" She made a triple layer pumpkin spice pie and it tasted wonderful!

Here's the recipe.

2 cups cold milk
2 pkg. Pumpkin Spice flavor instant pudding and pie filling
1/4 tsp ground cinnamon
1 tub Cool Whip
1 graham pie crust
1/2 cup pecan halves
1 tbsp honey

Beat milk, pudding mixes, and cinnamon with wire whisk until well blended. Spread 1.5 cups onto bottom of crust

Add 1.5 cups of whipped topping to remaining pudding mixture and stir gently. Spoon over layer in crust; top with remaining whipped topping

Refrigerate for 1 hour. Cook pecans and honey in skillet on medium-low heat 2 - 4 minutes or until pecans are caramelized, stirring frequently. Spread onto a sheet of waxed paper, separating larger clusters. Cool. Sprinkle over pie just before serving.

We omitted the pecan step.

She had a little mishap while slicing. :-)

The Swine Flu has Invaded our House!

I had to pick up Cami up from school on Tuesday. She was running a low grade temp, had a headache, and her throat was sore. Her fever rose to 101.6 after awhile and I gave her Tylenol to lower it, which it did. There was no way to get her into the doctor, we had to wait until Wednesday to get her in. Sure enough, she tested positive for H1N1. Poor thing. She's being kept isolated from the rest of us and I feel so sorry for her. She has to wear a mask when she comes out of her room to go to the bathroom. We're bringing all her meals, meds, etc to her. I can't wait til Sunday or Monday so that she can come out. The doctor said that she could go back to school on Monday, but it's been canceled until Wednesday due to absenteeism. Apparently there are approximately 130 students absent and 98 confirmed cases of swine flu.

Speech Therapy

I had a meeting today at Ems' school. She's been working on her speech since kindergarten I believe, but they haven't put her in Speech Therapy yet, which has bothered me. She tried to talk too quickly and has problems with her S's and combinations of S's.

The meeting went quickly, however, her teacher was there and I got to hear a lot of stuff about Ems. Apparently, she hasn't been bringing her backpack and planner to school because she said she lost it. However, she's been telling us that she has been leaving her homework and planner at school. Her teacher and I had a great conversation and we are going to set up a homework paper that I sign when it's completed and she signs when Ems turns it in. Hopefully that will help with the homework situation.

Once at home, I found her backpack with no problem. I don't know how she could say it was lost since it was in the living room. Anyway, while going through it, I noticed a horrendous odor. I don't know how we missed it before. I figured out that it was Ems' backpack. Apparently, she had put a carton of chocolate milk in there last Friday and left it. It had spilled and created a mess, which smelled terrible, and there was mold on her backpack. Ugh! It was gross. I threw her backpack and binder away (it smelled too) and got her a new one. We have so many backpacks in this house it's just mind boggling. Ems cried because she wanted THAT backpack, but it was too late. She got a stern talking to about putting stuff like that in her backpack and about drinking chocolate milk, which she is NOT allowed to have, due to caffeine and sugar.

It's been one of those days, people. I hope yours is better!

Boo at the Zoo

We went to Boo at the Zoo for the first time last night. It was a lot of fun, but we had to wait for a very long time!

I brought along snacks and drinks for Baby D, but didn't even think about it for the rest of us. Only Cami, Ems, Baby D, and myself went since Nate was working and Alex was at a slumber party. Luckily, the zoo provided cups of hot chocolate, at the whopping price of $2.50 each! Wow!

It was a lot of fun. The kids got candy, got to see the animals, and Ems had her face painted. She looked adorable!

I'm glad we got to go this year.

On a funny/weird note...there was a gentleman there who wanted to take a picture with me because he said that I looked incredibly like Christina Ricci. Flattering, yes, but it made me feel kind of weird. I'm sure that my face was bright red!

Midterms!

I took my midterms and did good on one and terrible on two. I'm really disappointed in myself. I hope that I can pick it up and do better. I currently have a 4.0, but it looks as though there is no way that I'm going to be able to pull my grades in those two classes up to an A, so I will be losing that, which really upsets me. However, hopefully I can just retake one of the classes to help out with that.
